Flash mp3 players store the mp3 data on a flash memory chip. Non-flash mp3 players store the mp3 data on a hard drive. Flash players are generally cheaper, but with a smaller capacity. They're also more robust because they don't contain moving parts.

non flash uses hard drives to store the music. its a mechanical device and is more easily damaged by dropping or impact.
flash are memory chips, making them less vulnerable to shock. but they are more expensive (for now) and with less capacity.
if you want to use the mp3 player while jogging, its best to have a flash based player. but if you want to bring almost your entire music collection around, a hard disk based one would be a better choice.
