And what kind of wood should I NOT use?

I think I would recommend Maple or Birch. I would not use any wood with an open grain especially not Oak, the grain is too open and the wood contains tannin.

The only wood I would use is Maple. And keep it clean using straight bleach scrub it good and rinse it good with water

Maple or butcher block. Then seal it with olive oil.

You need to use hardwoods and stay away from softwoods and aromatic woods.

maple or oak is best....but don't use olive oil to seal it cause it goes rancid and becomes a carcinogenic...use mineral oil and make sure to oil it regularily...every 3 months or so!

OAK ! is like cement ! you cant even get a nail through it.

maple is best hard rock maple!!cheap too!
