The freshman 15 is that freshmen in college, because they're studying hard and may not have money/access/time for a gym and again, don't have time/money/access to cook or buy real food, they end up not exercising and not eating healthy food. Also, because of the late night cramming, students end up eating late at night. Thus, the gaining of weight during freshman year. 15 would refer to how many lbs. one would gain.

"Freshman 15" refers to the extra weight often gained by college students during their first year away at school. Not everyone actually gains 15 pounds, but it is easy to put on a little extra weight, what with late-night study snacks, unlimited cafeteria food, and just the overall life-change of leaving home and going to college.
PS- The gals on the radio today said that it used to be called the "freshman 10," so 15 pounds is probably an exaggeration.

It means that a lot of freshman going away to college gain about 15 pounds from eating the crappy college food, drinking or what not.
