and how can I get mine to grow more leaves?

These would be in Southern California, far from frost, but close to drought. I'll agree that their roots are horrible, but they can't get too invasive here since they're all half dead.

Were they affected by frost? Did they not get enough water?

Mulching and fertilizing may help promote leaf growth.

Just heard about the invasiveness of these trees and their roots. If yours are dead or dying, be happy. The one I saw had impacted the foundation of a house and made it worthless. The root system was so rugged and rigorous as well as extensive that there appeared to be no way to abate it.
