my mom planted them and they did pretty well but now she wants to know how and when to harvest the seeds please help

When they start to die, cut the sunflower heads off and set them aside to dry out for a couple weeks. By then, the seeds should pop easily when you pull them out. Also, when their ready to pull the seeds out, they will have the black lines on them, like you see in the store. If you don't cut the heads off, birds will discover them and eat the seeds before you get the chance to.

I don't know exactly when to harvest the seeds, but when I was young my grandma had sunflowers and me and my cousins just picked the seeds and ate them whenever we saw them. They don't taste that good unless they're roasted, though. The shell is kinda soft.

There are several varieties and easy to grow. Buy a packet of seeds follow packet instructions and you should get a beautiful bloom.

oops, I did not read the rest of your question. After the flower wilts, dry the seeds. Maybe this link will help:

If they are dry cut them down and pull out seeds. To eat roast in oven on cookie sheet about 20 minutes, add salt.
If they are not dry, cover with cheesecloth before the birds get to them!!

When the pollen has all fallen off the seeds. Then wash them and dry out or you could bake them which ever you perfer.
