Good question. But it is just like when a guy drops off a girl at her house he always turns off the car, even if he is just saying goodbye really quick and leaving. Also for the same reason that there is always more light in the room than should be if there is only a little lamp on.

2 reasons --
1 - airbags are expensive to replace and the filmmakers end up having to do the takes numerous times for different angles and to get the best take.

2 - It is more exciting to see someone fly out of the car.
