I think Kebab comes from Persia which have had a fine kitchen in the old days. The Italian kitchen comes from the Persian and as you know that the French kitchen took inspiration from the Italian.

KEBABS ARE TURKISH SO THEY WOULD BE IN THE MEDITERRANIAN OR EURASIA. IF YOU WANT ONE CONTINENT MOST LIKELY YOU SHOULD SAY ASIA.
