i have a reallly sensitive nose, always have. why is that?

I'd say 4 things:
-nerve endings: the more endings, the more input)
-blood vessels: the more you break, the more you feel it and bleed
-thickness of skin: the thinner the skin the less space your nerve and vessels have to compress against your nose cartilage/bone
-psychological pain threshold: how easily your mind perceives a stimulus as pain

It is simply because of the no. of nerve endings in your nose. Some have less some have more, just like hairs.

All the other answers boil down to different genes in different people. Different humans have different genes for many of their odor receptor proteins. So we all have differences in the ability to smell certain things and in the sensitivity of our ability to smell.
