Put it in a jar/glass of water... it will root and become a vine.
some choose to put it into a mason jar with toothpicks inserted in it to keep it raised up out of the water a couple of inches.

Fill a canning jar with cold water and place the potato in the jar using toothpicks inserted in the potato to hold it up out of the water. Keep the jar filled with water. In a few weeks you will see sprouts and after that a pretty vine. Make sure you change the water in the jar weekly or it will smell.

i bought mine already rooted and growing its very large now,,it took over my yard..
i would think that all you would need to start one is just the same as a regular potato..plant the eyes of it...
Rick...i bought about 30 pounds of potato's this spring and planted them all they grew great and tasted great...let them get eyes on them and cut them off and plant them...

most people put it in water, but i have always put mine in a pot with soil...leaving the top clear of any soil...water it often. I have vines growing all over it in just a week.

If you buy the potato at the grocery store it probably will not grow because it is treated not to grow in the stores so you should go buy some seed stock at your local garden center or on the internet.
