are antonyms. Easy is to difficult. Simple and easy could be synonyms. It's just a matter of words preference.

The simple things are not always easy, and the complex things are not always hard, so I'd say easy before simple.

Simplicity is doing something without glam or fab. Something easy is just normally taking the shortest way out. So something should be simple because at least you can get something good out of it.
