Few Options:
1. It's low on coolant, but still has enough to function correctly - which is why it doesn't get hot.
2. Faulty Sensor
3. It's so low/empty that the sensor reads cold because it's not in physical contact with any coolant. (Highly unlikely, but possible.)
If you want to find out, on the weekend or a day before you go anywhere (so the engine is cool) fill up the coolant/water, start the car and see a few things:
1. Is the low coolant light still on after it runs for about 5 minutes.
2. Is coolant dripping from the car? If so, how hot is the car when it starts dripping. (The reason for this being that when coolant/water heats up it expands, so sometimes it doesn't leak until it's hot. So if it doesn't leak until it's hot, then it may be a radiator cap.)

I used to own a 95 Escort and had the same concern. The coolant level sensor is attached to the cap on the coolant overflow bottle, and it is super sensitive. Over time, let's say a three month period, the coolant bottle will boil out just enough coolant to make the light come on. With mine, it was like clock work. Every three months I had to add a pint of coolant or so to the bottle. Nothing is wrong with the cooling system, it is just designed that way.
As far as the A/C goes, No the 95 did not have any special features built into it to disable the A/C on low coolant, the latest model vehicles do, but not on the 95. I would say you have an A/c problem that is seperate from the low coolant light.

There is a sensor in the coolant reservoir that tells you that the level is low. However, this sensor is famous for false warnings due to corrosion of the connectors or debris around the sensor bulb. When the car is cool, top off the coolant, replace the cap and then add coolant to the reservoir and bring up the level to about 1/3 (2/3 empty).
Your A/C failure most likely does not have anything to do with this warning.

I have 1995 Mercury Tracer. It's the same car with a different name on it. The sensor for that is in the Fluid Recovery Bottle next to the radiator. If the fluid gets too low in the bottle gets to low, the light comes on. Mine does this every once in a while. I dump a glass of water in the bottle when it does. The next time it comes on I dump in the same amount of anti-freeze.
By the way, water from the radiator goes into the bottle when the engine is warm. Then, when the engine cools off, the water is sucked back into the radiator. That is why I put in anti-freeze every other time. It keeps the mix about right.
I don't know about the A/C.

You should definitely add coolant then, and do it immediately. This happened to my car recently, and i completely burned up my radiator and the tubes on the radiator blew up, and I was stranded on the side of the highway for a very long time. This is also linked to the AC. If you look at your heat gauge, you are probably running on hot, and that is very very bad. Good luck getting it fixed before your car dies!

I had the same kind of car, and the same problem. First the coolant light, then the ac took a ****, then it started overheating, and finally the head gasket went out. Take it to a mechanic if you want, but it might still end up in the junkyard next to mine.

Did you check the coolant? It may not be heating up but you might want to check it, Not sure about the ac connection.

you have a sensor in the bottom of your coolant tank and if it has any foreign material (dirt) around the sensor it will make the light come on, pull the coolant tank and flush it out with fresh water, this usually fixes the problem.

Could be that your fan or fan belt is not working properly. It could just mean that you're low on coolant. You should probably get ti checked out either way because if it does overheat it can cost you a lot of money to fix it.
