My favorite is chicken dumpling casserole....
1 onion, chopped
1/2 cup chopped celery
2 cloves garlic, minced
1/4 cup butter or margarine
1/2 cup all-purpose flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
4 cups chicken broth
1 (10 ounce) package frozen peas
4 cups cubed cooked chicken
DUMPLINGS
2 cups buttermilk baking mix
2 teaspoons dried basil
2/3 cup milk
1. In a large saucepan, saute onion, celery and garlic in butter until tender.
2. Add flour, sugar, salt, basil, pepper& broth; bring to a boil.
3. Cook& stir for 1 minute; reduce heat.
4. Add peas& cook for 5 minutes, stirring constantly.
5. Stir in chicken.
6. Pour into a greased 9x13 pan.
7. DUMPLINGS: Combine biscuit mix& basil (2 t.) in a bowl.
8. Stir in milk w/ a fork until moistened.
9. Drop by tablespoon onto casserole (12 dumplings).
10. Bake uncovered@ 350 for 30 minutes.
11. Cover& bake 10 minutes longer or until dumplings are done

lasagna! The way I learned to make it when I worked for Giangilo's. An Italian restaurant I worked for in the 80's. Owner was from Italy. name was Gino. He not only taught me how to make the best lasagna in the world, but also the best Pizza and Eggplant Parmesan and Canolli and fried ice cream!!

Mine is Meat Loaf w/ Mashed potatoes and gravy, cream style corn, cranberry sauce, green beans, and cornbread stuffing. Makes me hungry just thinking about it!!
