Others may say Im wrong, but from what I know of each, wizards (male) and witches (female) can learn magic, and thus eventually learn all spells. It takes them much longer to learn a spell and use it, as well as when they use a spell it drains them of strength, so they have to rest in order to use that spell again. They use Intelligence as their main source of power. On the other hand, sorcerers can be either male or female, and are born with magic already in them. The downside to that, is that even though they can already cast spells with ease, they only know a limited amount, and cant learn any more. The source of power for sorcerers is charisma.
