Purchased 2 trays of St Augustine and I'm not sure how big or small the plugs should be.

mine were 2" round plugs.....the key is water, everyday for 2 weeks twice a day! i placed mine 2 ft apart random, within 2 yrs it covered my 200 x 200 ft front yard

The plugs are precut and divided in the tray. Plant them in a checkerboard pattern about 10-12 inches apart. Be sure to water them daily until they root, then at least once a week especially if it doesn't rain.

First of all why in the world would you want to plant St Augustine grass? I had it for years and it dies very often due to small insects that grow underneath it. I used insecticides to kill the bugs but they keep coming back. the grass dies and never looks good.
I then changed to Marathon sod and it is soft easy to take care of and no dead spots. take back the St Augustine DO NOT PLANT IT!!!!!!!! it is very hard to get rid of also.

at least 1 inch and 2 inch is even better

just make sure each plug has some roots on it and KEEP IT WATERED until it establishes.....every morning!!
