Because while I think it is important to treat others the way you want to be treated, I do not agree with it working both ways. If you are nice or at least not as rude to them as they are to you, you are showing them a response they do not expect, and that can teach them a lesson, and teach them the right way to act, perhaps.

Also, simply treating them with no respect just because they have treated you the same, adheres to the rule 'an eye for an eye, a tooth for a tooth.' Such a rule need not be universal. Ghandi is attributed to have said 'an eye for an eye, makes the whole world blind.' Meaning, that revenge in accordance to that rule, only perpetuates a harmful cycle. Break the cycle! I know it takes a lot of energy, and you are going against base inclinations, but try to break the cycle, and you may surprise yourself.

No, I don`t think you should, why would it be PC to let someone get away with ignorance or prejudice anyway? If you find someone totally offensive then either walk away or tell them they offend you, don`t defer, that makes it look as if you agree with what they`re saying.

Be polite and leave.

If you can't leave, say 'Why would you say something that sounds so offensive?' If you don't get satisfaction, leave anyway.

If you are at work, that could be considered a 'hostile environment' and subject the company to a law suit if they don't take action to stop it.

I wouldn't defer them to be PC, they are probrobly ignorant to that too. Just tell them that it offends you and you want to end the conversation.
