If I need roadside assistance on a trip from Phoenix, AZ to Austin, TX, who can I call for help in cities along the way?

Get AAA. It's cheap and includes something like 5 free tows a year. They will come out to help with a flat tire, jump start or if you run out of gas. Some insurance companies also provide roadside assistance as a rider. Compare the cost and what is covered. Also, you can get free maps from their website or their office and you get discounts at hotels, some restaurants, car rental, etc.

AAA is good, but in all honesty i did that drive recently and there is about a 3-4 hour stretch in West Texas right pass El Paso where you do not receive cell phone service. I highly recommend driving a dependable car and drive early in the morning and late at night to prevent over heating. Also, if you do run into problems, there are always people on the highway that will stop but be careful and try to avoid it! Also, welcome to Austin! It is so so so much better then Phoenix!
