It is best if the DRAIN line does have a U in it. That keeps the smells from the drain from coming into the washer because water remains in the lower part of the U, causing a seal that gases cannot pass through.

Yes it stays in the drain with the hairpin curve. Otherwise it could pop out when the water starts flowing.

If you're talking about the curve at the end of the hose, it is just there to hook into the drain and keeps the hose in place. There are adapters that will fit around the hose and into the drain to keep out odors.

From the appliance, the hose must go UP almost to the level of the top of the appliance, then DOWN into the standpipe. This prevents back-syphoning, where the appliance could suck from the drain. The next Down/Up bend forms a U bend to prevent smells from the drain.(like you have under your sink)
