if my thermostat is located in a hall with 3 bedroom ajoining should i leave the three doors closed with the ceiling fan on or open

The rooms will probably be more comfortable with the doors open. When they're closed, the air is forced out under the door, pressurizing the room and slowing down the air in that room, especially if there is an attic above. And heat rises so it's going to have a heck of a time getting out under the door.
The thermostat will get a better reading of how the whole house is doing because of the natural air flow from the rooms. Closing the doors will probably shut the air conditioning off a little too prematurely for the bedrooms, causing them to get stuffy. The hallway will be cooler than the bedrooms since they have sun load and windows.

With the doors open it will keep circulating through the house. If you close the doors it will be very cold in the rooms with the door closed. Or very warm depending on the season. It would be better to keep the doors open or shut off the vents in the bed rooms and close the doors.

If the hall is cooler than any one room that has a south facing window then leave the door open. if the room is cooler than the hall leave it closed. If your talking about air conditioned then keeping the door closed keeps the room cooler because thats where the vent is.
