I know that A La Carte is where you choose off of a fixed menu, Dim Sum I know is chinese buffet and I also don't mean a normal buffet. What I mean is where the whole meal may consist of 10 courses, in a posh restuarant each one very small.

Are you thinking of a tasting menu? A chef will put together a multi course meal with his best dishes. The courses are usually smaller but they are more numerous than the typical menu.

I think you're thinking of tapas, which means "small plates". Dim sum is sort of the chinese variety, where carts of dumplings come around and you pick the ones you want.

In Turkey, where this kind of dining is quite normal and popular, it is referred to as meze (pronounced MAY zay). And these can come hot or cold. If one is making a complete meal of meze, one would ordinarily have both hot and cold.

I have recently seen Americans around the NYC area referring to it by the Turkish word.

Two answers. In most cases it is called "A la carte", which means each thing is bought separately. But in Spanish restaurants it is called "Tapas".
