I am traveling by car from Massachusetts to Southeast AZ to relocate for a job. How long will the trip take? How often should I plan stops? Are there any good cheap places to stay/refresh along the way (I-71 South, I-70 West, I-44 & I-40 West, I-25 South, or I-10 West)? What are some good tips for relocating and packing?

I don't think you should consider this trip without joining AAA, in case you should need roadside assistance during your trip.

One of the benefits is that they will prepare a "TripTik" for your specific trip. You can use it as a guideline, avoid construction zones (or be prepared for slowdowns, etc.), decide where to sleep.

You have ask for a lot of information. I shall answer just a few.
A great and every cheap (but clean, safe and fast) place to refresh or freshen up are the BIG TRUCK stops along the way. They all have private shower room. Pay a few dollars to use, they supply everything.
During day driving switch off every 5/6 hours, and night no more than 3.
Stop walk around about every 2/3 hours for a few minutes.
Far as packing, go to your local market, see the produce manager, get apple or Orange box's, they are great for packing
There are a number of rest areas along the way, if you see big rigs (trucks) it is safe to stay and rest.

Use AAA. Make sure you bring lots of water and a cell phone. The desert is hot, hot, hot. I hope your car has A/C. The temp is usually 100 even in the beginning of October.

Use Rand Mcnally road trip calculator to determine the travel time. Then just divide it up.

Give yourself plenty of time. And prepare for culture shock. SE AZ and MA are going to be pretty different.
