Yes there are different kinds of mortar designed to bond with different materials.

The two I'm aware of are Lime mortar used for stone and cement mortar used for cement and concrete.

No deference but a bit of a difference. Stone has a bit more lime added, Brick a little wetter and worked more so it "slumps" more. Block uses a stiffer mix and adheres to the vertical joint. Mortar is also used to "parge" block, a thin stucco-like coating over the block.

the mortar for bricks and cinder blocks is type "S" ( is what we use) S stands for structural.......there is type "M" and type "N" .... the most common ones..n is used for stone......

you want type n for bricks it is a little weaker for settleing, you want type s for stone a blocks typs is very strong 3700 psi, as for type n it is 800.

none at all, you use mortar mix on all of it.
