I have learned that my car Nissan Altima 2005 can be downshifted manually to take her to a lower gear for more pick up while accelerating or for stopping using gears. Is anything wrong with that ?

yes it is and it is safer too! if you are going down a steep hill you should shift to lower gear so you won't burn out your brakes.
My husband does it all the time and keeps meticulous gas records and says you even save gas

Manual shift mode to the right of and behind D and forward and back slot is for manual shifts not for down shifts to slow the car down. Brake pads cost less than a transmission. Manual mode lets you decide when to up shift and after or during braking downshifting to be in the correct gear to pull away faster. You know the drill there is this paperback book in the glove box it takes an hour or two become an expert on your cars controls. Did you know if you hold the unlock button on your remote the windows go down?

Just ensure its reasonable, so that when you downshift the engine speed is less than 5000 rpm, at a guess if you wish to get good performance.

However, most transmissions these days prevent you from putting it into a gear too low... i.e. 60mpg going from 4th or 1st... shouldnt be possible... just be sensible and there is nothing wrong doing so!

No.

I hired a nanny from the Czech republic a few years back and she did that for a couple of months before I realized it (the first time she drove me somewhere). It wastes gas and is tough on the transmission. At least it made me laugh! ;-)

Only when absolutely necessary. Eventually it will ruin the shift kit and that will cost big $ later on.
