The dining plan is really great. If you know how to use it, you will save a lot of money. I cannot stress how important it is to ask your travel agent for help on this. When I used the plan for the first time when it came out, my agent helped me with my choices and really increased my savings. I am going to assume you have the standard plan, when I use the standard plan I usually save about 40% and you get to eat at really nice places.
There is a good selection of restaurants to choose from. Not all of them are on there, but the ones that aren't on there, I don't think you will miss not eating at them. There are so many to choose from that you couldn't possibly do them all in one trip. You really get a good selection and lots of different options. I believe Disney has a printout (a PDF) that lists all of the restaurants and if they are 1 or 2 points. But, right now I can't remember where to get it, I'm thinking I got that from my agent as well. As far as websites, I've found that most of the fan sites have better information on the dining plan than Disney. They just don't have much information available. I use my agents page and it is one of the best I have found for describing everything.
