heredity has to do with your genetics...they say alcoholism runs in families

Environment has to do with your upbringing and what surrounds you. Having an alcoholic father might make you more predisposed to doing so

Heredity is inherent in your DNA / chromosomes. You inherit it from your biological parents. They are your own personal building blocks.
Environment is the opposite. Whereas heredity is internal, environment is made up of external stimuli. Where you live. Where you've been. Everything you see, touch, taste, feel, or hear. All of this from the moment you are born adds up to the person you are today.It puts the finishing touches on what your genes gave you to start off with.
