I think Thailand will be the best choice. First because it is cheap and have many sights to explorer, wherever you choose to stay. Its also a easy country to visit, specially if its your first trip to Asia.
HK - sure its OK for shopping, but its very expensive. Singapore is more expensive to visit than Thailand, also have some good things to see, but for me - I will sure choose Thailand.

I've been to all three and all I can say is don't go during the summer. It's hot hot hot and you'll sweat so much. I went to HK once during the winter and it actually feels pretty good. So HK I think, plus they sell stuff cheap.
