Try Monument Valley in northern Arizona. The rock monuments in this area have been featured in many westerns such as "The Searchers" with John Wayne. This area is on the Navajo reservation and is very remote.

Well, NEw MExico has quite a bit of scenery, tho not a lot of plateaus. Arizona has quite a few of those, and so does Nevada. Arizona is very beautiful, with a lot of desert beauty, but New Mexico is quite vague.

Meteor Crater outside of Flagstaff Arizona is AWESOME!
Would also recommend Vegas, Grand Canyon, Carlsbad Caverns and Hoover Dam!

For the things you are looking for Tucson AZ is probably the best. The Grand Canyon is also in AZ. It's really nice there.
