Are you sure the thermostat is in correctly? Is the grill open for air to flow freely through the radiator? Coolant disappears quickly? Is the engine running right? The coolant should not flow through the radiator until the engine has reached the temp. of the rating on the thermostat. Only then should you see movement of coolant in the radiator. If it's moving all of the time, you probably have a defective thermostat. Good luck.

I am quite familiar with the Chrysler 3.8 liter as well as the Mitsubishi built 3.0 liter engines that are in all Chrysler minivans. It seems as if you either have a blown head gasket, or a cracked cylinder head. Pay close attention to the oil. Pull the dipstick. If the oil on it has a milky color, that is a sure sign that it is a head gasket or cracked head. Another telltale sign is if the exhaust is spewing white smoke. I had the same problem in a 1989 model, and that was the cause. (Note:Labor on this kind of repair is on the expensive side.)
