can you eat the green part? what do I plant it in? can it be re-harvested?

You can plant it in a good potting soil. It will grow like crazy so be careful where you plant it.

You can then harvest the roots in the fall when the green dies back.

They must dry for a certain amount of time before use.

For more specific growing instructions contact your local County Extension Office. They are there to help farmers with growing problems and will be happy to help.

The green parts are not used for consumption.

If it's growing then you can plant it. Try putting it in a pot with potting soil not regular earth from your garden. They actually are quite pretty plants if you let them grow. Yes, I don't see any reason why you couldn't harvest part of the root if you wanted to.
