"Simple Man" by Shinedown is great.

A guy named Syd does a great version of U2's 'One' (got it off MP3.com years ago when they had independent artists. Johnny Cash also did a good version of this song.

I like the H.I.M. covers of Chirs Isaaks "wicked game" and Neil Diamonds "solitary man" and nirvanas cover "love Buzz" and "jesus dont want me for a sunbeam" by the vaselines

Old 97s cover "Girl from El Paso" on a soundtrack CD Fox put out for "King of the Hill". It has everything I think a cover should have: it's an entirely different take on a good song, yet it also makes sense; it stretches the band's repertoire a little bit; and it shows a sense of humor.

Jimmy Hendrix's cover of "All Along The Watchtower" is probably one of the most famous.

I like the Smashing Pumpkins version of "Landslide" very much.

The Pillar version of "Sunday Bloody Sunday" just plain rocks my face off.

My all-time favorite is "Black Magic Woman/Gypsy Queen" as done by Santana:
First, it's a double cover (covers both "Black Magic Woman" by Fleetwood Mac & "Gypsy Queen" by Gabor Szabo).
Second, it's such a definitive version that most people think it's an original Santana song.

without a doubt H.I.M. are doing the best cover songs in the industry, (they have many, Rebel Yell, Dont Fear the Reaper etc) Wicked Games (originally done by Chris Issak) is my fav, the uncensored video of this cover is kewl as Ville gets robbed, beaten and thrown out of a strip club!
