Traditional animation: "Stitch, The Movie." I'm not a fan of "kid" movies, but this one is funny. And the moral of the story (for kids) is not the usual heavy-handed schlock, either.
CG Animation: "The Incredibles."
Both have sub plots that adults can relate to, I guess...the second one in particular.

Dumbo. One of the great films of all time & it contains a sequence "Pink Elephants on Parade" that is so far ahead of it's time animation-wise that it's just incredible.
