on ps2, hold the left analogue stick, on PC, press 6 on the numpad

Pull the left stick back while pedaling.. works with bicicles sport bikes and the cop bikes (My favorite, they are fast and handle realy well ) , You can do wheelies with the choppers but its hard, and almostalways has to happen with full acceleration from a full stop.
Oops I been hooked on San Andreas,, it works the same but I forgot they don't have pedal bikes in vice city.

the same way you do it in real life.
hold the rear brake, pedal to the medal, then while pulling up the bike (pressing up) release the break.
wheelie time!
