Why would anyone in their right mind build a gable roof in place instead of buying prefab trusses or building the trusses by hand on the ground and have them lifted in place by a crane?

Because pre-fab trusses are inevitably inferior in terms of materials and workmanship. Anything mass produced for mass construction is built to minimum code standards.

I've seen newly assembled pre-fab houses with sagging roofs before the first owner even moves in...even on some 8,000 sq/ft starter-castle-type houses.

There's a much better chance of solid construction with a stick-built truss.
