The handsigns are real, but they are just the symbols for the signs of the zodiac.
I think Naruto uses them in some way to concentrate his thoughts.

The hand signs are just there so the user can concentrate better. Along with chakra, you get a jutsu^^. In some cases you might need more, like scrolls and blood or other stuff, but other wise this is all I can tell you.
As for the elemental thing, they don't really use those, they use jutsus and that's it. Of course they may be based on different elements like wind, water, ice, fire, etc...
By the way, all the chakra/jutsu/hand seals aren't real, everything is credit to Masashi Kishimoto's imagination, along with Japanese Mythilogoy and other stuff here and there ^_^;;;;

They aren't really elements or showing a certain amount of chakra, but they hand seals are rather a way of concentrating and molding chakra to create a technique, depending on the seals used as well as the order. There are 12 basic seals that are based on the Chinese Zodiac, and then you get unique seals (like the one Naruto uses for Shadow Replication) that are used for unique, Bloodline or forbidden techniques. Here's the list of the 12 basic seals:
1. Rat
2. Ox
3. Tiger
4. Snake
5. Dragon
6. Dog
7. Hare/Rabbit
8. Horse
9. Ram/Sheep
10. Monkey
11. Bird
12. Boar/Pig

My theory is that the handsigns form and build chakra. Like when they were tree climbing, they did a handsign to gather the chakra to their feet. A handsign doesn't mean they are doing a justu, they're just gathering chakra and building it. That's my theory.
