Depends on what you want to study. They're all great schools in their own way. I go to Northwestern University, which, by looking at your list, may be something up your alley, so you could look into that more.
Carnegie Mellon is a great school, but it's a fairly urban campus in the middle of Pittsburgh (my hometown). It's not...pretty, per se, but it's got a great reputation and is consistently ranked at the top of charts.
I looked at Penn State and hated it (25k undergraduates was a little much for me), but I have a lot of friends who go there and love it. It's a pretty decent state school, but it's out in the middle of corn fields (literally).

What do you intend to study? If you want to be an engineer or mathematician and have solid qualifications, go for MIT or CalTech. For anything in the humanities, Cornell or Columbia.
Actually, don't apply to the schools I have advised... They are all on my tentative apply-to list and the last thing I need is more competition.

Those are all decent choices -- with NJIT being way below the others. If you can get into all of them -- choose MIT or Cal Tech if you want a technical degree and Cornell or Columbia if you don't.

Go to cooper union. I've always liked the sound of the name, don't know why, I just do. You need some criteria, so why not what sounds good rolling off your tongue?

what are your interests? Don't choose a selective school just because it is selective...
