When is the best time to harvest potatoes?

When the plants start dying. Depends on your soil temperature as to whether you can wait to dig-if the soil gets too hot the potatoes will rot, just dig around the plants carefully with a good shovel just outside the cracks in the ground. Where there are cracks there are the tators.

Wait for the plants to die completly then wait 2 weeks and dig them up
