You could take a course in Dietary Management (2 yr) from your local community college, which will teach you what institutional and hospital food standards need to be.
But if you are thinking of becoming employed w/the Fed Govt.. then they require a degree (B.S. and up) in Agriculture.

all health department inspectors has to have a bachelors degree preferably in the health sciences. It would help if you have an R.N. license....registered nurse

You may want to seek a culinary institute for this. My guess is you have to learn a lot about food and proper preparation techniques. A culinary institute would be a logical place to look.
