It does not appear to be amount of freon.

do you mean compressor cycles off? if you rev. engine hard it is designed to cycle off then reengage once engine returns to cruise or idle. does lo side gage start dropping before it kicks out? sign of restrictionin system. there is a glass site gage on most systems. with compressor on it should be clear and if it looks cloudy or bubbles the you are low or have restriction. expansion valve is leading culprit if restricted or compressor is coming apart. now if thisd is an older car then the clutch may be worn out. the gap should be less than .035 to .040. if the clutch looks burnt and badly discolored then the clutch assy on front of compressor is worn out. good luck

Sounds like you have a loose or worn belt that is slipping when you suddenly increase the RPMs. If the belt appears tight and in good condition, the problem is most likely in the gear shaft going in to the A/C unit. Applying some lubricant to the shaft where it enters the A/C unit can help temporarily if it is seizing up(possibly bad/worn bearings in unit0 but it will most likely need to be replaced.
