I just ate breakfast at a wonderful little place in Pasadena, California called "The Reyn Coffee Shop." I had their version of Huevos Rancheros, called "Reyn Rancheros." Instead of the tortilla, they use a base consisting of twice-baked potatoes topped with homemade salsa, cheese, egg and avocado. Delicious and reasonably priced!
