Sell the house and buy another.
Aim for something like this: A huge master suite, a massive living room, a spectacular kitchen with a separate dining room (semi-formal), and a very tiny guest room, one with minimal closet space (no more room than a couple of suitcases would fill).
As an alternative, do something irreversible with the rooms used by the kids. Demolition of filling them with concrete comes to mind.

Now is the best time of your life. You get to rediscover yourself! Take some class at the local community college or continuing education. Join some clubs, travel somewhere that you've never been, even if it's in the same state. EXPLORE!

well if the kids have flown away but not too far away my guess is the parents would move so they lived across the street from there kids like in everybody loves raymon!
