It is probably possible, but not easy, and most likely not really practical. We lived on a sailboat and refrigeration is one of the biggest issues and one of the biggest drains on power. Not only must you consider the issue of producing enough power, which may be theoretically possible with today's technology, but also the surrounding air temperature, that will mean you need more power to make up for loss of "cold" from the refrigerator. You will also need more power every time you open the refrigerator as you will lose some of the cold. In producing the cold, the refrigerator actually generates heat, which may be an issue if you are bicycling in a hot climate.

Good luck with your research on this, but based upon our experiences with trying to find practical and efficient and inexpensive ways to manage refrigeration on a sailboat, you may have a big job to tackle. Interesting concept though!

A fridge requires up to 14 amps at 110v to start...much less to run
so you may have to start it up with house current...
1 amp at 110v = 110w...

So your generator output would have to be 1540 watts to start and run a 'fridge.
Seeing how the steady output of a bicycle-type generator is 150w, (burst output = up to 450w) I think you could do it with several people on several generators....maybe a micro fridge like this...
