To anyone who thinks knowledge is finite, I say this - how many fingers am I holding up behind my back?

Depends what you mean by knowledge. I don't think there can be, but some people have attempted to calculate the amount of information in the universe, and come up with actual figures! (No, I don't really understand the maths!)
Or do you mean a limit to the human capacity to store and process information?
Alexi Sale had a joke in which he speculated that eventually your brain would reach it's capacity and have to delete old information for new. He said he was getting paranoid that someone would tell him the capital of Hungary, and he'd forget how to breath!

Just JR's reference to the amount of information in the universe is a good one.

But I think there's an infinity of potential knowledge about mathematics that could in principle be made up. My understanding is that Goedl's theorem proves this but I might be wrong since I'm not sure if I understand Goedl's theorem correctly.

The amount of knowledge depends on how much the brain can absorb. Although seemingly it is finite, the brain can only absorb what it understands, thus the individual level of knowledge is pending on what he or she can comprehend.

Of knowledge one individual can acquire, yes: our brain is too small to know "everything".
Of knowledge manking can gain, probably there is a limit as well: there could be a day when we will know exactly how our universe work, even resolve the principle of uncertainty, but we would still want to know things we can't do (even if they are impossible).
Whatever we know, we will still not be able to predict the future for example. We are limited.

If there was you would have to assume that somebody or something was totally aware of every single individual particle in the universe, its course, its purpose, its position and every possible variable concerning its future. So I think its safe to conclude that knowledge is infinite.

if you percieve there are edges to the universe and there is only the matter within the universe nothing outside then it is reasonable to presume should we be able to travel to the edges of the universe we could extract all information from it and would know everything.
