because when we are younger we haven't had all the experiences and pitfalls in life. We are willing and able to try anything, to get that experience, then when we grow we get more cautious about everything. I can't begin to tell you how many times I've looked back and thought "OMG, what was I thinking". There is a lot of world for the young to discover, but once we get older we've already seen it, done it and ready to move on.

Young people by nature are curious on what the world has to offer. They have an urge to explore certain avenues, regardless of WHETHER its good or not. That's why as they say, curiosity once killed a cat... Seriously, young people want to explore, while older people feel that they've seen it all (which isn't true), or because they know how the world operates (in their OWN point of view.

There is a theory of 'tabula rasa', or that the mind is a 'blank slate' when a person is born.

As you grow up, the slate fills and some of the information that you absorb prevents you from accepting conflicting/ contradictory information.

Thats a general reason. Hope it helps.

This is due to the fact that younger people have not formed their own opinions and bias, yet. That is why it is very important to teach them good values while they are young.

By 'open minded' I assume you mean open to new ideas? the older you get, you realise, that the 'new ideas' are not that new and it is usually a case of - seen it, been there and done it!

Kids haven't had anyone else's ideas shoved into their heads yet and don't see things pre-labeled as good or bad they simply see things the way that they really are.

Because children aren't as self-conscious as teenagers and adults. And plus, people just think it's cute when kids try to tell someone off? ;P
