I actually just helped someone organize her kitchen cabinets and pantry!

The main thing to remember when organizing a closet like this, is to make it functional. Keep things you use most often within easy reach, and put less frequently used items higher or lower.

The Time Saver ( http://ineedmoretime.com ) has good tips about making your whole house more efficient. Take a look at their page of Kitchen Tips ( http://ineedmoretime.com/kitchen_tips.htm ) and Organized Kitchen Traits ( http://ineedmoretime.com/organized%20kitchen.htm ).

LifeOrganizers.com has a lot of articles about organizing your home, including many on the kitchen ( http://www.lifeorganizers.com/home/ ).

There's also websites out there that list organizing products, and you might get some ideas from them. (One is http://www.organizes-it.com/ , check their Kitchen category for racks, lazy susans, baskets, etc.)
