I wish to create an abbreviation string in bibtex format for the following:

@STRING{MfM = "Monatshefte f\"{u}r Mathematik"}

where the \"{u} is the format for a u with an umlaut. The trouble is the symbol " which is treated as the end of the string.

Any ideas on how to avoid this problem?

instead of \"{u} try $\ddot{\mathrm{u}}$ .... that works in Miktex. Its technically not an umlaut but it looks the same.

Try \""{u} within the context of a quoted string

Just a guess. Haven't used TeX in 20 years. Never used omelets.

Better yet, just use MS Word.
