Everything the other people posted is true, however, the most important reason the speed is limited is for warranty purposes. Operating a car at high speeds significantly increases the stress on the engine and transmission, the two most expensive parts of the car. Since your warranty includes replacement of these if they fail, the speed is limited to reduce the potential for damage.

If you drove your car very regularly at 120MPH (near the limit of most cars) you'd do a lot of damge over 4 years. The manufacturers are banking on you not doing that.

Safety and Legal Convention.

Tires are rated for certain speeds at which they are safe.

Steering and suspension also are factors in determining the maximum safe speed an integrated vehicle system (a car) can operate.

There have been some expensive lawsuits to manufacturers regarding their responsibility when accidents have occurred.

Protection of the powertrain, and minimizing warranty costs are another factor.

The speed limiter can be disabled, but you may have to find someone other than the dealer or manufacturer to do so.

Some time ago German auto makers entered into a gentlemen's agreement to limit the top speed of their cars to 155. This does not apply to tuner houses such as AMG or German produced products in other cars. For example, the Bentley uses an VW/Audi based motor but the car can hit 200MPH.

Like other people said, safety and sensibility. Speeds that high are dangerous since the car is harder to control and obstacles are harder to avoid. And why would you need a car that can go over 100mph if the highest speed limit is 75mph?

These cars are way to fast and not everyone can control them at speeds higher than that. If you know someone who know cars WELL, it can be disabled. But its to discourage people from maxing out the speed.

To protect the drive train and the people that are on the road. The rev limit can be adjusted by someone that knows what they are doing.

It's to discourage speeding. Since most of these vehicles are much faster than they're governed to, they do that to assist law-enforcement, because they can probably outrun many police cruisers.
