I heard a trio of this type live once, and enjoyed the hell out of it. Any answers are very much appreciated.

then u should try gerry mulligan's quartet, well it's not a trio, but the concept of the absence of harmony instrument is there. it's 2 horns, bass, and drums.

Two that I can think of but they are not considered jazz.
The first is a big favorite of mine "Morphine" from Boston. You may have heard them in the film "Get Shorty" The leader died in 1999 and so did the band.
The second is a band I know less of is "Bazooka" which also was another 90's band but more avent-garde.

There are probably a few, but more than likely, they usually are quartets with a piano player. Charles McPherson is a great sax player with a quartet.
