Try American Tall Tales by Mary Pope Osborne (on Amazon) or just go to the public library. They have plenty of American folklore in the 398 section or thereabouts. You can flip through those and borrow the one you like best.

my favorite one is the 'reader's digest guide to american folklore and legend.' i believe it is out of print, but here is a link to an ebay auction for it, which will at least show you the cover of the book. i got it for my birthday when i was a kid, it's one of my favorite books ever.
