Well you can always start with Knoppix. It will boot into a GUI Linux environment, right from the CD/DVD. So you don't even have to really "jump" into it right-away. This will let you play around with it until you are comfortable.

For installing Linux, I believe Knoppix has an install to hard drive option. This is a possibility. Also, Ubuntu is supposed to be pretty good / user-friendly. There is also open suse which has GUI and wizard install process (like ubuntu).

I would stay away from Gentoo because there's a lot more manual configuration / building. It's confusing for me.

I've heard really good things about Ubuntu. Many people consider its interface and ease-of-use on par with Windows or Mac (or at least everyone sees its potential to get there sometime soon.)

Pretty much anything with a KDE desktop is close enough that you can be comfortable fast.
