Three because you have two,
but you ate one which means
there must have been a third.

You still have 2 apples because the 1 you ate is inside of you.

Make sure of how you phrase this. I have 2 apples and I ATE 1, I had 3 to begin with and still have 2. If I EAT one, I'll be left with 1.

Because you're asking "How many do you have," not "How many you have left," the correct answer is 2. You ate one of the two you had, but that doesn't make it any less yours -- it's just in a different state as it's being digested.
