You should be given some tortilla chips and salsa. Don't eat too much of this as it will spoil your appetite. Depending on the restaurant there is a variety of items. You may ask what the speciness meter is on each dish. every plate should come with beans and rice. You may ask for a small bowl of tortilla soup. I would order a mexican stak entry. Enjoy.

Depends which one. Stick to their specialties. Ask the waiter for suggestions.
I always go for cheese enchiladas or Beef Fajitas (A cheaper version of Fajitas are Tacos Al Carbon - they are just already rolled into a tortilla for you and you get a tad less meat)

Margaritas. Then after about 3 get some carne asada enchiladas with refried beans and a side of rice. Yummy!
Make sure you tell them double x hot!

chimichangas are good, quesadillas are good, burritos, they usually have really good rice and beans, and most mexican restaurants have this really great white cheese dip and it is to die for seriously try some of that if they have it :)

Carnitas. It's like pork fajitas, comes with fried pork chunks or shredded pork, salsa, sour cream, etc and flour tortillas.
